To continue our farm-fresh recipes, we’ve created one of the most refreshing salads I’ve ever tried. For all of the cucumber fans out there, you’re going to love this recipe. Think of this as a simpler take on a traditional Mediterranean-style salad. You’ll get just as much flavor with a few veggies and homemade dressing!
The main star of this salad is of course the cucumber, but the flavors of cherry tomatoes, radishes, and red onion are appreciated too. Most cucumber salads are topped off with a yogurt-style dressing, but we’ve created a much lighter spin on a herb-heavy dressing for this creation. Love the taste of basil, dill, pepper, and olive oil? Well, you’re in luck, and you may have just found your new favorite vinaigrette. Below, you’ll find the four veggies needed to create this salad as well as everything you need to make the dressing at home.
