As the fall season has officially been marked by the fall equinox, warm, spicy, fall-time flavors are very much just getting started. We’ve done our best to cater to all of your autumn favorites from apple oatmeal muffins to a cozy pear crisp, and today we are bringing you one of the most classic, American breakfast recipes of them all…Pancakes! After all, National Pancake Day is just around the corner! This flapjack recipe is perfect for the weekends when you have a little more time to prepare a large, morning breakfast spread and eat with your family. In addition to a large breakfast, these pancakes can also serve as the heart of a delicious brunch or even a special breakfast in bed. The mix calls for cornmeal as a base, alongside flour, which deepens their color to a more deep, golden tone to bring in the fall-time tones. 

Pancakes all over the world

As much as we love pancakes here in the US, did you know that there are several other countries around the world that have their own variations? In France for example, they have what is known as a crêpe, which is a papery thin pancake that is often filled with a savory inside such as cheese and meats, or a sweet filling that may include nutella and fruits. Australia has pikelets, which are fluffy and thick like your traditional American pancakes, however they are much smaller and can be served in the afternoon time with some tea. Eastern European countries have blini, which are the thin pancakes that often have a sweet or savory stuffing. And then in Somalia, you have what is similar to Ethiopia’s injera, and is called anjero, which has a spongy, flatbread-type texture. It’s pretty incredible that all over the world, regardless of how different the cultures may be from one another, we all have pretty similar ideas when it comes to what to do with a batter consisting mainly of flour, eggs, and milk!

Keeping in line with the fall-time theme, this recipe calls for sweet apples. Not only are apples perfect for satisfying that sweet tooth, but they are also incredibly detoxifying for the body. Cornmeal Pancakes

Ingredients

Cinnamon Apples

2 medium apples, 3 small

3 tbsp brown sugar

2 tbsp butter

1 tsp cinnamon

Pancakes

¾ cup whole milk, or milk of choice

1/2 cup cornmeal

1/2 cup whole wheat flour

2 tbsp brown sugar, packed

1 egg

3 tbsp salted butter, melted, plus more for pan

1/2 tsp baking powder

½ tsp baking soda

Directions

  1. Prepare cinnamon apples by roughly chopping apples, removing seeds and stems. 
  2. Add apples, brown sugar, butter, and cinnamon to a saucepan on medium heat. Cook, uncovered, for 10-15 minutes, stirring occasionally. Apples are done when they are tender but haven’t completely lost structural integrity.
  3. Preheat a medium frying pan to medium heat and lightly grease with butter or cooking spray.
  4. In a large mixing bowl, whisk egg. Add brown sugar, salted butter, and whole milk.
  5. In a separate bowl, combine cornmeal, whole wheat flour, baking powder, and baking soda.
  6. Fold dry ingredients into the wet mixture until just combined.
  7. Scoop roughly ½ cup of batter onto the hot pan and cook for 2-3 minutes, or until golden. Flip and continue cooking an additional 1-2 minutes, or until golden.
  8. Remove from the pan and repeat until all of the batter has been used.
  9. Top with cinnamon apples and serve warm.
