In the neverending pursuit of finding the perfect, portable breakfast, I find myself always seeking out new, healthy recipes to introduce into my household. I am a big fan of anything that is healthy, can be eaten on-the-go in the car, and is simple to make. Bonus points if it is something that I can prepare in a batch and have a large amount for the week. That way I can “meal prep” one day a week and have breakfast ready for everyday of the week. Talk about ideal! Now that we are fully in the fall-time and spice flavors are surrounding our noses, I take this time of year to experiment with season-appropriate recipes. In September, I can’t help but to think of apples and the harvest season, so they find themselves into more recipes than usual as opposed to other months. That’s when an easy recipe like apple oatmeal muffins becomes an absolute staple. I love them, my daughter loves them, and they are a breeze to prepare and add unique twists to when I want to spice things up.

An apple a day

I’m sure you’ve heard the saying, “An apple a day keeps the doctor away.” While this saying may not be entirely true, it is certainly a step in the right direction towards a healthier lifestyle that includes the simple, daily practice of adding more fresh fruits into your diet. This is one of the easiest ways to achieve long lasting health. We want to avoid scarce, “healthy” habits that find themselves into your diet when you remember to implement them, and we want to focus on how to introduce simple, dietary lifestyle choices that are easy and enjoyable to maintain on a daily basis. 

Apples are one of my favorite fruits because I feel like most people are familiar with them enough to find it easy to eat more of them once they learn the impressive health benefits. The benefits of eating apples include:

Nutrient dense – These juicy fruits include vitamins A, C, K, and E, along with fiber, potassium and manganese. Considering they are filled with polyphenols, which are natural, chemical compounds which can help regulate blood sugar levels and reduce inflammation in the body.

Incredibly hydrating – Something we like to say here at Farmbox is, “eat your water.” In my opinion, eating foods that are high in water make it easier not only to eat more nutritious foods, but also to internally up your water levels. Apples are made up of about 84% water, and thus eating more of them will infuse your body with one of the highest quality water sources, one that comes directly from fruits and vegetables. 

Promoting gut health – In addition to being a natural detoxer, apples contain the fiber pectin, which acts as a prebiotic in the body. This particular type of fiber feeds healthy gut bacteria which support a healthy digestive tract. And since our gut is considered to be our second brain, feeding it nutritious, fibrous foods becomes critical for a balanced system.  

In addition to delicious, juicy apples, being that this a muffin recipe, high quality oats are also not to be neglected or skipped! Including more oats in your diet may help lower blood sugar, improve digestion, along with lower your chance of colon cancer. They are inexpensive and extremely versatile to cook with whether you are preparing a simple oatmeal recipe, oatmeal pancakes, cookies, or as in today’s case, muffins. Apple Oatmeal Muffins

Ingredients

1 ½ cup whole wheat flour

1 cup finely chopped apple, about 1 medium apple

¾ cup rolled oats

½ cup brown sugar, packed

½ cup whole milk or milk substitute

½ cup maple syrup

2 eggs

6 tbsp coconut oil, melted and cooled

1 tsp cinnamon

1 tsp baking powder

3/4 tsp baking soda

¼ tsp nutmeg

Topping:

2 tbsp Turbinado sugar or coconut sugar

Directions

  1. Preheat the oven to 350º Fahrenheit.
  2. Cut apples, removing the seeds and stems, into small pieces, about pea sized.
  3. In a large mixing bowl, whisk eggs until frothy. Add apples, brown sugar, milk, maple syrup, and coconut oil and mix until combined.
  4. In a separate bowl, sift together whole wheat flour, rolled oats, cinnamon, baking powder, baking soda, and nutmeg.
  5. Fold dry ingredients into the wet until just combined, a few lumps are okay!
  6. Pour mixture into a lined muffin tin about ¾ full and lightly sprinkle with sugar. Bake for 20-25 minutes. Test for doneness with a knife, once it comes out clean, they are done. Cool and enjoy!
