3 large purple yams

½ cup vegetable broth

⅓ cup olive oil

2 tbsp fresh chives, chopped

1 tbsp salt

1 tsp black pepper

Directions

  1. Bring a large stockpot filled about ⅔ full of water and salt to a boil.
  2. Peel and cube the purple sweet potatoes and add to boiling water. Boil for 20-30 minutes, or until fork tender.
  3. Strain and return to the stockpot. Add the vegetable broth, olive oil, chives, and black pepper and blend with an electric mixer or mash with a potato masher until desired smoothness is reached. Taste with a spoon and add salt as needed.
